(Image credit: Leela Cyd ) We love our iced coffee in the summer, but fall and winter belong to the latte. We love to sit inside on a chilly day with a hot, frothy latte or cappuccino. But a latte shouldn’t just be a coffee shop treat. Even without an espresso machine, a milk frother, or other toys of the trade, you can make a pretty decent latte at home — and yes, it will have a beautiful cap of foam. But first, let’s talk terms. A very “wet” cappuccino with a lot of steamed milk is sliding into latte territory, and what one coffee bar calls a cappuccino might actually be a macchiato elsewhere. The point is, the ratio of espresso, warm milk, and milk foam can all be adjusted to your precise liking when you make a drink at home, and you can call it whatever you like in the privacy of your own kitchen. Watch Vincenzo Amato: How To Make An Italian Caffe - Apartment Therapy Video What About the Espresso. The thing common to all the drinks above is espresso, which is coffee brewed under steam pressure that forces the water through coffee grounds. It’s intense, oily, and rich, and these qualities balance out the quantity of milk used in these drinks. Adding steamed milk to weaker American-style coffee doesn’t quite give you the real flavor and experience of a latte or cappuccino. Of course, if you have an espresso setup at home, great. And if you have a one-touch espresso machine, like a Nespresso, you can use that to create drinks like this too. But personally, I use extra-strong coffee from an Aeropress, which for me presents a good balance between cost and quality.

It makes coffee strong enough to almost (not quite!) be called espresso, but it doesn’t cost very much or require technical skill to use. What About the Milk Foam. It’s true — you don’t need a fancy foamer to make frothy milk at home. It’s actually really easy to make it in the microwave. All you do is shake nonfat or 2% milk in a jam jar until it’s foamy, take off the lid, and microwave it for a few seconds. You get spoonfuls of foam, plus warm milk to pour in your latte. We explain how to do this below. Or use strongly brewed coffee from an Aeropress, not diluted with any water. Froth the milk: Pour milk into the jar. Fill no more than halfway. Screw the lid on tightly, and shake the jar as hard as you can until the milk is frothy and has roughly doubled in volume, 30 to 60 seconds. Microwave the milk: Take the lid off the jar and microwave uncovered for 30 seconds. The foam will rise to the top of the milk and the heat from the microwave will help stabilize it. Pour warm milk into the espresso: Pour the espresso or coffee into a wide, shallow coffee cup. Use a large spoon to hold back the milk foam, and pour as much warm milk as you would like into the espresso. Add foam: Spoon as much milk foam as you would like onto your latte (or perhaps it's a cappuccino at this point!). Garnish, if desired, with a sprinkle of cocoa powder or nutmeg on top of the foam. Sip immediately! Recipe Notes Flavoring the latte: If you want a sweetened or flavored latte, stir in some syrup with the warm milk, before adding the foam. Flavoring ideas: You can add a teaspoon of vanilla or almond extract, or a sweetened flavored syrup such as this one: Homemade Caramel Syrup for Your Coffee. Maple syrup is also delicious. If you have one of those fancy little aerators for making foamed milk, use it. Otherwise, grab your smallest whisk and whisk the milk like crazy for a minute or so until it’s good and foamy. Then pour that foamed milk into the coffee. What about a little something extra. Go ahead -- grab the whipped cream. Why not? Now enjoy that mocha in your mouth and the moolah in your pocket! Please upgrade your browser or enable JavaScript for a better experience. Activate the magnetic whisk at variable speeds to get a perfect milk texture in your Cappuccino, Latte or Baby Latte as well. This machine automatically aerates shavings or cocoa powder to chocolatey perfection. To optimise the taste and increase the life of your machine, we recommend using the Claris-Aqua Filter System cartridge. This cartridge should be screwed onto the bottom of the tank and the settings selected. Plug in the appliance but do not turn it on. Open the service hatch. Calibrate the appliance depending on the water hardness. Adjust the coffee temperature. Adjust the automatic power supply cut-off mechanism. Close the service hatch. Remove, fill and replace the water tank. Put coffee into the container provided for this purpose. As the devices are tested in factory, it is possible to have coffee residue in the device during the first use. Run a brew cycle with water only to rinse. Adjust the coffee grinding fineness. Bottled water is also OK. Do not use refrigerated or warm water as this might impact the temperature of the beverage.

Use always fresh water and replace the water if system has not been used for more than 2 days. For cold beverages, use water at ambient temperature, never refrigerated water, and place two or more ice cubes (20g per ice cube) in the cup. To be noticed that water hardness is the first reason of machine calcification and so it is recommended to descale the machine frequently (every 3months or less according to water hardness). Regular descaling helps protect your coffee maker and ensures it a longer life. It will also help maintain a quality of coffee that remains constant over time. We recommend using the descaling product provided by the manufacturer. For a daily average usage of 4 cups and if the water is hard, we recommend descaling your machine at least every 3 months. If you live in an area where the water is very hard, you may wish to descale more often. The Claris cartridge must be replaced approximately every 50 litres of water or at least every 2 months. This can prevent clogging in the water outlet and hygiene issues. Verify that the drip-tray is correctly positioned. After turning off your appliance and letting it cool: clean and unclog all the orifices of the nozzle with needle provided. Unclog the orifice of the steam nozzle support pipe with a needle. Remove the Claris cartridge. If this does not solve your problem, turn the fineness of grind button to the right to obtain a coarser grind (may depend on the type of coffee used). Run one or several rinsing cycles. Avoid using oily, caramelised or flavoured coffee. Reduce the volume of coffee selected using the rotary knob (located in the coffee bean container). Select the coffee button. Turn the grinding fineness button to the left to obtain more finely ground coffee. Make the drink in two cycles by using the 2 cups function. The coffee quality obtained will be even better. Make sure the magnetic float of the water tank moves freely. Rinse the tank and descale if necessary.

The Velvetiser has been calibrated to serve at the best temperature for flavour, which is up to 68-70 degrees. However a few degrees either way is also perfectly acceptable, and remember that warming your cup beforehand is a perfect tip if your preference is for a slightly warmer drink. The Velvetiser itself is not dishwasher safe, but has an easy-access, wipe-clean, non-stick chamber for which we recommend a soft cloth with a bit of soapy liquid, then rinse.
